For my first meal I went with a staple in our household—Spaghetti and Meatballs—but instead of buying a jar of sauce and pre-made meatballs, I made it all from scratch.
I found the recipe on Bonappetit.com, and though it looked a little intimidating and I almost abandoned this one when I started making my grocery list, I’m glad I saw it through to the end. I learned quite a bit from this recipe and I’m proud to say it tasted really good (my wife can vouch for me on that).
The recipe serves eight, so I had to cut the ingredients in half or else we would have had way too much. After cutting the recipe in half, we still had plenty to feed my wife, my son, and myself for two nights.
I focused on taking my time, enjoying the process, and doing it right.
Be sure to wash dishes along the way to avoid having a pile to take care of at the end because you use a lot. My wife played with our son in the living room, which is next to our kitchen, and he popped in every few minutes to tell me something or show me his toys while I cooked, so I never felt like I was missing out on family time.
